Another of Cuisinart's "next generation" of food processors, this is not as large or quite as powerful as the 14 cup model, but it will perform the same functions and is more than adequate for most families' needs. The large feed tube means less pre-chopping and the dough blade and function ensure you get the perfect dough consistency. Like its bigger sibling it has a new stream-lined design and a longer warranty than the original 11 cup Cuisinart, but is compatible with any 11 cup specialty discs or blades you may already own.Equipped with an extra-large feed tube, a small feed tube, a dough blade, and slicing and shredding discs, this 600-watt, 11-cup, full-size food processor provides all the power, versatility, and capacity needed by any household. The motor automatically adjusts the speed to ensure proper consistency when mixing doughs. Cooks experienced with Cuisinart food processors will welcome the new feed tube and pusher assembly, which is easy to use and conveniently located at the machine's front. At 4-1/4 inches by 2-3/4 inches, the large oval feed tube accommodates whole fruits and vegetables. The small, cylindrical tube is located inside the pusher assembly and has its own hollow pusher, which removes with a twist. The Quest for a Perfect Cup of Coffee

It is generally agreed that there are four basic elements critical to the perfect cup:

Element 1. Water:
Coffee is 98% water. Often overlooked, the quality of the water is as important as the quality of the coffee. A good rule of thumb is that if your water doesn’t taste good from the tap, it won’t taste any better in your coffee. That’s why Cuisinart has added a water filter to the Brew Central coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.

Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks’ supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once removed from the freezer, beans should be maintained in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself.

Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. A medium-fine grind is recommended.

Element 4. Proportion:
The cups on the Cuisinart coffeemaker measure 5 ounces. Add the amount of ground coffee that corresponds to the number of cups being brewed. Many coffee bars and the Specialty Coffee Association of America recommend adding 2 rounded tablespoons of coffee per 6 ounces of water. Some coffee manufactures recommend using 1 tablespoon per cup. Cuisinart recommends using 1 tablespoon of ground coffee per cup, but use more or less to suit your taste. Note: the maximum capacity for ground coffee is 15 tablespoons for the 12-cup coffeemaker. Exceeding this amount may cause overflow if the coffee is too finely ground.

  2. Water Reservoir: When filling the coffeemaker with water, refer to the carafe height markings and fill to the desired number of cups. Be sure to add a small amount of extra water to account for the amount of water lost in wetting the grounds and lost as steam during the brewing process.
  3. Showerhead: Distributes water evenly over coffee, reducing temperature loss as water passes through grounds.
  4. Water Filter: Charcoal water filter eliminates chlorine, calcium and bad tastes or odors from tap water. Cuisinart recommends changing the water filter every 60 days or 60 uses ‒ or more often if you have hard water.
  5. Filter Basket: Holds a #4 paper filter or a permanent filter.
  6. LCD Digital Clock: Displays the time of day and set time for automatic functions.
  7. Function Knob and Flip Switch: Used to initiate programming of automatic functions.
  8. The Auto On feature is used to program the start time of the brew cycle. The Auto On can be set for any time, day or night. The PM indicator is displayed on the LCD for nighttime program times. The Auto Off feature is used to shut off the coffeemaker at a preset time, anywhere from 0 to 4 hours. Note: To program the coffeemaker to shut off automatically, read the instructions included in the Instruction Manual under 'To program the Variable Auto Off'
    1. Heater Plate Control Knob: For controlling the temperature of the coffee after brewing. There are three temperature settings high, medium and low.
    2. 1-4 Cup Setting: The 1-4 cup setting button is used when you make small amounts of coffee. Normal coffeemakers will produce a colder batch of coffee when smaller amounts are made, because the heater doesn’t have enough time to properly ‘warm up’ to heat a small amount. The 1-4 setting basically ‘double heats’ the water, making your smaller amounts as piping hot as a full pot would be. To use simply press the 1-4 button on the control panel after turning on the unit.
    3. Retro-style flip switch is used to turn your coffeemaker on and off and works in tandem with the function knob.
  9. Clean Setting: Tells you when it’s time to clean your coffeemaker. Remove built-up calcification from the water reservoir, to help extend the life of your coffeemaker.
  10. Brew Pause: Stops flow of coffee from basket when carafe is removed (30 seconds max) from the heater plate, so a cup can be poured in mid-brew. Since the flavor extraction rate varies during the brew cycle, we recommend allowing the brewing cycle to finish before pouring the coffee. The coffee brewed at the beginning of the cycle has a flavor profile which is very different from the flavor at the end of the cycle. Once the coffee has finished brewing, stir it before serving to blend the flavors. The coffee at the bottom of the carafe will be somewhat stronger than the coffee at the top.
  11. Carafe: The easy pour, no drip glass carafe has an ergonomic handle and brewed coffee markings for two to twelve cups.
  12. Heating Plate: Scratch resistant with black, nonstick coating.
  13. Ready Tone: Signals the end of the brew cycle with five beeps (coffee will continue to stream from the filter for a few seconds after the tone).

Tips for Better Food Processing
  Food size: Always cut large pieces of food into smaller pieces of even size -- about 1/2 an inch -- to produce a uniform chop.
Chop and Grind Function
  Bowl fill: Do not overload the work bowl; processed food should not reach more than two-thirds of the way up the work bowl. Please note: because of the powerful motor, it is recommended to use one hand to support the chopper/grinder during operation.
  Chop vs. Grind: Use the Chop function for chopping, pureeing and mixing. It is the right choice, for example, for chopping soft, fragile food such as herbs, celery, onions, garlic and most cheeses. It is also the right choice for pureeing cooked vegetables, making mayonnaise, and mixing salad dressing. Use the Grind function for grinding spices, and for chopping hard foods such as peppercorns, seeds, chocolate and nuts.
  Pulse vs. Continuous-hold: Pulsing is best when you are using the chop function. Two or three pulses are often enough. Be sure to check the food frequently to prevent over processing. If you over-process, you are likely to get a watery paste instead of a fine chop. A continuous-hold is best when you are using the grind function. Depending on the food, you may have to operate the unit for several seconds to achieve the desired results -- or as long as 20 seconds for some seeds. When operating in continuous-hold, use a pulse action every 10 seconds to allow food to drop to the bottom of the work bowl. This provides more consistent results. Never operate the unit continuously for longer than one minute at a time.
  Adding liquid: You can add liquids such as water, oil or flavoring while the machine is running. For example, you might want to add oil when making mayonnaise or salad dressing, or you could add vanilla or alcohol when making frozen yogurt. Pour the liquid through one of the two openings in the cover. Please note: only add liquid through one opening at a time. The other opening must be left unobstructed to allow air to escape. If both opening are blocked, liquid cannot flow smoothly into the bowl.
  Removing food from the sides of the bowl: Occasionally food will stick to the sides of the bowl as you process. Stop the machine to clear the food away. Once the blade has stopped, remove the cover and use the included spatula to scrape the food from the sides of the bowl back into the center. Do not put hands into bowl unless unit is unplugged.

Quick Start Guide
  1. Place the work bowl firmly on the motor base. Opening the at the back of the bowl must face column at the back of the Chopper/Grinder. Turn bowl counterclockwise to lock in place.
  2. Insert the blade assembly. Carefully pick up the blade by its hub and place on the center stem until it drops to the bottom of the stem. Firmly push to lock the blade into position. NEVER TOUCH THE BLADE ITSELF AND NOTE THE BLADE IS NOT PERMANENTLY LOCKED.
  3. Place food in the work bowl. Be sure the food is cut into small pieces, and the bowl is not overloaded.
  4. Lock the cover into position.
  5. Press the appropriate Chop or Grind control, depending on the food you are processing.
  6. When you have finished processing the food, stop the machine by releasing the control button.
  7. ONCE THE BLADE STOPS MOVING, unplug the unit.
  8. Remove cover and work bowl
    1. Turn work bowl cover clockwise to remove.
    2. Turn work bowl clockwise to unlock and lift lid off base.
      Note: thicker ingredients can be removed while work bowl is still on base.
  9. To remove liquids and sauces from bowl: simply pour ingredients out of work bowl. The convenient BladeLock System keeps the blade safely in place.
  10. To remove thicker ingredients from bowl: Carefully remove the blade assembly by holding the handle on the top of the sheath and gently pulling up to disengage blade lock. Remove food with spatula.
    Tips: Always process foods in order, from dry to wet, to avoid having to clean bowl and blade between each task. Never operate the Cuisinart Elite Collection Chopper/Grinder without ingredients in the work bowl.

Cleaning and Storage
 To simplify cleaning, rinse the work bowl, cover, and blade immediately after each use. Wash blade assembly, work bowl, cover, and spatula in warm soapy water. Rinse and dry. Use caution when washing the blade.
Make Hummus in Minutes
 Avoid leaving the blade in soapy water where it may disappear from sight. The work bowl, cover, blade assembly, and spatula can be washed on the top rack of a dishwasher. Wipe the motor base clean with a damp sponge or cloth. Dry it immediately. Never submerge the motor base or plug in water or other liquid.
 The Cuisinart Elite Collection Chopper/Grinder stores neatly on the countertop in a minimum of space. When it is not in use, be sure to leave it unplugged. The hidden cord storage underneath the motor base will help to keep excess cord off the countertop. Store the unit assembled to prevent loss of parts. Store the blades out of reach of children.
